If you remember our kitchen from the past, you might be wondering what’s changed—don’t worry, we’re staying true to our roots. But a few exciting new elements are waiting for you.

One of the biggest changes is our open charcoal grill, where Thomas and Waal will explore the full potential of fire to create delicious, flame-kissed dishes. As always, we focus on fresh ingredients from nearby farms—grown organically and sourced through whole-animal butchery.

From 4:00 PM, we open our doors for evening service, serving beloved classics like beef tartare, Beuschl, and of course, the iconic Wiener Schnitzel. Our kitchen remains committed to what makes ZOMM special: honest, creative dishes that bring the pure taste of nature to your plate.

Our wine list is a true treasure chest—filled with familiar favorites and exciting new discoveries. While our focus lies on austrian wines, hidden gems from neighboring countries also find their way onto our shelves. We carefully select organic wines and rare specialties you simply must try. Every bottle is personally chosen and tasted by us—because only the best makes it into your glass.

We take pride in our non-alcoholic offerings too. Our lemonades burst with flavor, thanks to homemade syrups made from garden herbs and fruits sourced from our region.

Our loose-leaf teas come from the House of Tea & Coffee in Innsbruck. We also serve handpicked herbal infusions from Anne, lovingly grown and processed in her garden in Hatting. And for coffee lovers: our exquisite blends are freshly roasted by Julian at the Unterberger roastery in Innsbruck—perfect for starting your day or winding down a memorable evening.

regional, seasonal, and soulful

Our dishes would only be half as good without the passionate producers and farmers from our region who stand behind every ingredient. We owe at least 50% of our flavor to the hands that work the soil with dedication and care.

Beyond sourcing, we refine many ingredients ourselves: fermenting, pickling, and crafting products like soy sauces and miso pastes that give our dishes their unique character.

We source our vegetables and herbs from Anne, Waal’s wife, who cultivates high-quality produce in her garden in Hatting with great attention and love. In addition to gardening, Anne creates exceptional herbal teas and recently became a certified herbal specialist. Her garden continues to grow, and she’s currently working toward her organic certification—another step toward sustainable agriculture.

Alongside Anne’s garden, we collaborate closely with farmers from Telfs, Kematen, Hatting, and Ranggen. These partnerships help us maintain a regional and sustainable cycle, ensuring short transport routes and resource-conscious methods. This keeps flavors fresh and authentic—and allows us to actively contribute to preserving nature and the future of farming.

We firmly believe that the key to pure taste lies in nature. By working with local farmers and producers from Tyrol, we keep the cycle small and protect valuable resources. Our kitchen brings the best of the region to your plate—with love for creative craftsmanship and the conviction that quality begins with the ingredients.
